Vietnamese Garlic Prawn and Noodle Salad

Healthy Mumma Vietnamese Garlic Prawn and Noodle Salad

Serves 4

Ingredients

Garlic Prawns
8-10 Raw Prawns Per Person (Shelled and Deveined)
1 Tablespoon Olive Oil
1 Garlic Clove, finely chopped
1 Long Red Chilli, finely chopped

Dressing
1/4 Cup Lime Juice
1/4 Cup Fish Sauce
2 Tablespoons Rice Wine Vinegar
2 Tablespoons Raw Honey or Rice Malt Syrup
1 Garlic Clove, finely chopped

Salad
1 Packet 100% Buckwheat Soba Noodles, cooked and drained
3 Cups Iceberg Lettuce, finely shredded
1 Carrot, cut into matchsticks
1 Cucumber, cut into matchsticks
1 Cup Beansprouts
Handful of Coriander Leaves
Handful of Vietnamese Mint Leaves

    Method

    1. Prepare soba noodles as per packet instructions, drain in cold water and leave to cool.
    2. Heat a frying pan over medium heat, add olive oil and brown garlic and chilli. Add prawns and cook until prawns are cooked through. Be careful not to overcook the prawns. Set aside.
    3. Combine all dressing ingredients together and set aside.
    4. Arrange salad ingredients ad soba noodles separately in 4 bowls. Top with prawns. Drizzle over the dressing or serve on the side.
    5. Serve immediately.
