Chilli Lime Chicken Fajita Salad

Healthy Mumma Chilli Lime Chicken Fajita Salad

Serves 4

Ingredients

4 Chicken Breasts
1 Lettuce of your choice, finely sliced
2 Avocados, peeled and sliced
1 Red Capsicum, cut into strips
1 Yellow Capsicum, cut into strips
1 Red Onion, cut into quarters
Corainder Leaves
Olive Oil or Coconut Oil

Marinade/Dressing
3 Tablespoons Olive Oil
1/3 Cup Lime Juice
1 Teaspoon Rice Malt Syrup
1 Teaspoon Red Chilli Flakes
1/2 Teaspoon Ground Cumin
Himalayan Pink Salt

    Method

    1. Place all marinade/dressing ingredients into a bowl and combine. Reserve half the marinade for the dressing. Place the chicken into the other half of the marinade and set aside to marinate for 30 minutes.
    2. Whilst waiting for the chicken to marinate, place lettuce, avocado and coriander leaves into 4 separate bowls.
    3. Heat a grill pan or frying pan over medium high heat, add a small amount of oil and grill chicken fillets on each side until golden and cooked through. Once chicken is cooked, set aside allow to rest.
    4. In the same pan, add another small amount of oil and cook capsicum and onion until cooked to your liking.
    5. Slice the chicken into strips and place in the bowls along with the capsicum and onion.
    6. Drizzle with remaining dressing and serve.
