One Tray Chicken Bake Healthy Mumma

Serves 6


6 Maryland Chicken Legs, skin on
2 Teaspoons Paprika
2 Teaspoons Oregano
4 Garlic Cloves, finely chopped
1 Tablespoon Raw Honey
1 Teaspoon Dijon Mustard
1 Lemon, juiced
1/4 Cup Olive Oil
6 Potatoes, cut into bite size pieces
1 Large red Onin, cut into quarters
Punnet Cherry Tomatoes
1/2 Cup Chicken Stock
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Preheat oven to 180C.
    2. Arrange the chicken in a baking tray and sprinkle with paprika, oregano, salt, pepper and garlic. 
    3. In a small jug, combine honey, dijon mustard, lemon juice and olive oil.
    4. Pour the marinade all over the chicken and rub with your hands to ensure pieces are evenly coated.
    5. Scatter the potatoes, red onion and cherry tomatoes around the chicken. Drizzle the vegetables with extra olive oil. Season with salt and pepper.
    6. Pour the chicken stock into the base of the baking dish. 
    7. Bake for 1 hour until the chicken is golden and cooked through.
