Rainbow Fish Parcel

Healthy Mumma Rainbow Fish Parcel

Serves 4

Ingredients

2 Corn on the Cob, cooked and kernels sliced off the cob
1 Can Chickpeas, drained and rinsed
Handful Green Beans, chopped into bite size pieces
3 Tomatoes, chopped
1/2 Cup Pitted Sliced Green Olives in Olive Oil
Fresh Herbs, chopped (I used chives and thyme)
4 Pieces of White Fish Fillets (I used Sea Perch also known as Orange Roughy)
Himalayan Pink Salt and Freshly Cracked Black Pepper

    Method

    1. Preheat oven to 200C.
    2. Create 4 pieces of baking paper to use as parcels. Place fish on top, season with salt and pepper.
    3. Divide corn, chickpeas, tomatoes, beans, green olives using some of the olive oil amongst the 4 parcels.
    4. Top with fresh herbs.
    5. Fold the edges of the baking paper into parcels and place on a baking tray.
    6. Place it in the oven and cook for approximately 12-15 minutes until the fish is cooked through.
    7. Carefully open the parcels and slide the fish onto a plate and enjoy.

    NOTE: I served the rainbow fish parcels with fresh stir fry greens in ginger, garlic, tamari and sesame oil.
