BBQ Chicken and Limey Avocado Salsa Bowls

Serves 4


BBQ Chicken
2 Large Chicken Breasts, cut into bite size pieces
1 Tablespoon Smoked Paprika
1 Teaspoon Ground Cumin
1/2 Teaspoon Cayenne Pepper Powder
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Himalayan Pink Salt
1 Tablespoon Olive Oil

1 Punnet of Cherry Tomatoes, cut in half
1-2 Avocados, chopped
4 Spring Onions, chopped
1 Handful of Fresh Coriander, chopped
1 Fresh Lime, juiced
1 Tablespoon of Avocado Oil or Olive Oil
Himalayan Pink Salt and Fresh Cracked Black Pepper

2 Cups of Cooked Fluffy Quinoa

Lime Cheeks to Serve


    1. In a bowl place chicken and BBQ seasoning ingredients and stir to combine. Set aside.
    2. In another bowl, add tomatoes, avocado, spring onions, coriander, lime juice, avocado oil and season with salt and pepper. Gently toss to combine.
    3. Now would be the time to prepare the quinoa.
    4. Heat a large frying pan over medium high heat, add olive oil, cook chicken on each side until cooked through.
    5. In individual bowls divide chicken, salsa and fluffy quinoa equally. Serve with a lime cheek and enjoy.
