Pea and Ham Soup

Healthy Mumma Pea and Ham Soup

Serves 6-8

Ingredients

Gluten Free Ham Hock
4 Sticks Celery, chopped
1 Carrot, chopped
1 Brown Onion, chopped
2 Garlic Cloves, chopped
500g Green Split Peas
Filtered Water
1 Tablespoon of Coconut Oil or Olive Oil
Himalayan Pink Salt and Freshly Cracked Black Pepper

    Method

    1. Rinse split peas under cold running water until water runs clear. Drain and set aside.
    2. Heat oil in a large pot over medium high. Add carrots, celery, onion and garlic and cook stirring for 5 minutes until the onion softens.
    3. Add split peas, ham hock and water to fill the pot. Season with salt and pepper. Bring to the boil over high heat. Reduce to medium-low and simmer, covered for 2 hours until the ham hock is tender and the meat is falling away from the bone. Remove ham hock from the pot, leave to cool and then remove all the meat from the bones.
    4. Using a hand stick blender, blend the soup until smooth.
    5. Add meat from the bone and stir through.
    6. Ladle soup into bowls and enjoy.
