Fried Rice

Fried Rice Healthy Mumma

Serves 6-8

Ingredients

2 Cups of Cooked Rice, cooled
1 Onion, chopped
2 Garlic Cloves, chopped
Vegetables, chopped (your choice I used red capsicum, carrot, zucchini, mushrooms, peas, corn, broad beans and broccoli stems)
6 Rashes Bacon, cut into bite size pieces
6 Eggs, beaten
Tamari
Sesame Oil
Fish Sauce
Olive Oil

    Method

    1. In a large pot, on medium high heat on the stove top, add olive oil, bacon, onion, garlic and sauté for a few minutes.
    2. Add all vegetables and sauté for 5 minutes.
    3. Meanwhile cook the eggs in a frying pan with some olive oil. Once cooked through, cut up into bite size pieces and set aside.
    4. Add rice to the large pot and stir vegetables through.
    5. Add sesame oil, fish sauce and tamari to taste. Stir through, take off the heat, add egg and stir through.
    6. Serve and enjoy!
