Chicken, Chorizo and Chickpea Stew

Serves 4-6


2 Chicken Breast Fillets, cooked and shredded (Tip: Coles sells slow cooked shredded chicken) 
1 Onions, chopped
2 Garlic Cloves, chopped
1 Chorizo Sausage, sliced
1 Zucchini, cut into bite size pieces
Handful Green Beans, cut into bite size pieces
1 Can of Chickpeas
1 Can Chopped Tomatoes
1 Cup Water
Handful Spinach
2 Bay Leaves
1 Tablespoon Paprika
1 Whole Dried Red Chilli
1 Tablespoon of Coconut Oil or Olive Oil
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. In a casserole dish, place on medium high heat, sauté onions, garlic and chorizo sausage in your choice of oil for a few minutes. Then add zucchini and beans and sauté for another few minutes.
    2. Add all remaining ingredients except the spinanch, bring to the boil then turn the heat down low and simmer until the vegetables are cooked and tender, approximately 20 minutes.
    3. Turn off the heat and stir through the spinach until its wilted. Serve and enjoy.
