Healthy Mumma Buddah Bowl

Serves 4-6

Ingredients

Protein of choice or leave out for vegetarian option – this has a marinated whole butterfly chicken
Roast veggies – pumpkin, sweet potato, zucchini, garlic, cherry tomatoes and broccoli stems
Cooked Basmati Rice
Iceberg Lettuce, shredded
Frozen Peas and Corn, cooked
Steamed Broccoli
Fresh Cherry Tomatoes
Fresh Dips – I used hummus and beetroot
Goats Cheese 
Hemp Seeds
Olive Oil
Lemon Juice

    Method

    1. Roast protein and all the veggies drizzle with olive oil.
    2. Steam the broccoli.
    3. Cook the rice and frozen peas and corn.
    4. Once all cooked and prepped assemble all ingredients in bowls.
    5. Sprinkle with hemp seeds, drizzle olive oil and squeeze lemon juice.
