Healthy Mumma Broccoli and Bacon Salad with a Creamy Dressing

Ingredients

2 Heads of Broccoli, cut into florets
8-10 Rashers of Streaky Bacon
1 Red Onion, sliced
Bunch of Red Grapes, cut in half
1/2 Cup Slivered Almonds, toasted

Dressing
1/2 Cup Natural Greek Yoghurt or for a dairy free option use Natural Coconut Yoghurt
1 Lemon, juice
2 Teaspoons Wholegrain Mustard
1 Teaspoon Dijon Mustard

    Method

    1. Place bacon in a frying pan over medium high heat and cook until golden and crispy. Set aside to cool and then break up into pieces.
    2. Saute the onion in the same frying pan utilising any fat that has come off the bacon until the onion is tender and sweet.
    3. Steam the broccoli until tender, making sure it is still a vibrant green but not too hard. Make sure you don’t overcook it. Leave to cool.
    4. Combine all dressing ingredients in a container with a lid and shake well.
    5. Gently combine cooled broccoli, bacon, red onion, grapes, almonds in a bowl. Drizzle with the dressing and gently coat. Serve and enjoy!
