Summer Salad

Serves 4

Ingredients

6-8 Slices of Prosciutto
2 Yellow Peaches or Nectarines (or both, 1 of each) cut into wedges
2 White Peaches or Nectarines (or both, 1 of each) cut into wedges
1 Punnet of Mixed Cherry Tomatoes, sliced
1 Lebanese Cucumber, peeled into ribbons 
4-6 Bocconcini, drained and coarsely torn
Fresh Basil Leaves
Fresh Mint Leaves

Dressing 
Handful Fresh Mint
Handful Fresh Basil
1 Teaspoon Sherry Vinegar
1/3 Cup Olive Oil

    Method

    1. Place all ingredients for the salad on a serving platter, placing them around the platter.
    2. To make the dressing, place all ingredients into a food processor and process until finely chopped.
    3. Dress salad with dressing and put extra dressing in a small serving dish on the platter with a spoon for guests to add more if they wish.
