Choc Chip Raspberry Cookie

Healthy Mumma Choc Chip Raspberry Cookie


2 Cups Sunflower Seeds, blended
1 Cup Almond Meal
1/2 – 1 Cup your Choice of Natural Sweetener (Coconut Nectar, Maple Syrup – ensure 100% with no added cane sugar or Raw Honey) – add as much or as little as you like depending on how sweet you would like the cookie to be.
2 Eggs
2 Tablespoons Coconut Oil, melted
1/4 Cup Cacao Nibs
Frozen Raspberries (either one on top of each cookie or add more mixed through the mixture depending on how much raspberry flavour you would like)


    1. Preheat oven to 200C.
    2. Line an oven tray with baking paper.
    3. Mix all the ingredients together, leaving a raspberry for the top of each cookie.
    4. Using a tablespoon spoon out the mixture and place on the baking tray flattening and rounding the mixture as you go.
    5. Top each cookie with a raspberry.
    6. Bake in the oven for 15-20 minutes until golden brown.
    7. Remove from the oven, cool completely and enjoy!
