Marinated Chicken Salad

Serves 4


2 Tablespoons  Olive Oil
1 Lemon, juice
4 Garlic Cloves, chopped finely
1 Tablespoon Balsamic Vinegar
2 Teaspoons Dried Parsley
2 Teaspoons Dried Basil
Himalayan Pink Salt and Freshly Cracked Black Pepper

2 Skinless Chicken Fillets, diced
1 Punnet Cherry Tomatoes, cut in half
2 Cucumbers, cut into bite size pieces
2 Avocados, cut into bite size pieces


    1. To make the marinate, combine all ingredients in a bowl, set aside half and pour the other half on the chicken pieces.

    2. In a large pan on medium high heat, cook the chicken until cooked through.
    3. In a large bowl combine all salad ingredients, mix well.
    4. Add dressing and combine until the salad is well coated. Enjoy.
