Seafood Paella

Healthy Mumma Seafood Paella

Serves 4-6

Ingredients

1 Cauliflower, blitzed in the food processor
1 Tablespoon Coconut Oil
1 Onion, chopped
2 Garlic Cloves, chopped
2 Long Red Chillies, chopped (one for garnish)
1 Teaspoon Saffron Powder
2 Cups Leftover Mussel Liquid or alternatively Chicken Stock (you may require more depending on the size of the cauliflower)
12 Mussels
12 Scallops
12 King Prawns
1/2 Cup Frozen Peas
1 Tablespoon Parsley, chopped

    Method

    1. Heat a large frying pan over medium high heat, add coconut oil, once melted add garlic, onion and 1 red chilli and saute until onions become soft.
    2. Add cauliflower and saffron powder and mix through the garlic, onion and chilli. Once mixed through add your choice of liquid i.e. mussel liquid or stock. Cook for approximately 5 minutes until cauliflower is tender and some of the liquid has evaporated.
    3. Add seafood and peas to the pan, pop the lid on and cook for a further 2-3 minutes until the mussels have opened up and the scallop and prawns are just cooked through.
    4. Sprinkle the dish with parsley, second red chilli and serve. 

    TIP: You could add any type of seafood, chorizo, chicken or anything you would like to this dish.
