Pork Fillet with Stir Fry Noodles and Greens

Healthy Mumma Pork Fillet with Stir Fry Noodles and Greens

Serves 4

Ingredients

2 Tablespoons Gluten Free Hoisin Sauce
2 Tablespoons Tamari
1 Long Fresh Red Chilli, finely chopped
1 Tablespoon Freshly Grated Ginger
2 Garlic Cloves, chopped
2 Teaspoons Tamarind Puree
4 Teaspoons Sesame Oil
1 Lime, juice
3-4 Pork Fillets
2 Bunches Brocolini, chopped into bite size pieces
1 Packet Gluten Free Rice Noodles
Handful Snow Peas
2 Spring Onions, chopped
1 Tablespoon Sesame Seeds

    Method

    1. Preheat oven to 200C.
    2. Combine hoisin, tamari, chilli, ginger, garlic, tamarind puree, lime juice and 2 teaspoons of sesame oil in a small bowl.
    3. In a baking tray, place the pork and spread over half the hoisin mixture over the top. Put in the oven and roast for 10 minutes or until just cooked through. Leave to rest.
    4. Meanwhile, prepare noodles as per packet instructions by placing them in hot water for the desired time. Drain noodles and set aside.
    5. in a wok, place on medium high heat then add spring onions, brocolini and snow peas and stir fry for 1-2 minutes. Add the noodles and the remaining hoisin mixture. You may want to add a small amount of water at this stage too, this will make the sauce go further and cover all the noodles.
    6. Divide noodles and greens amongst serving bowls. Slice the port and divide amongst the bowls. Sprinkle with sesame seeds and enjoy.
