Chicken Meatballs in Rich Tomato Sauce Healthy Mumma

Serves 4-6


300-500g Chicken Mince
1 Cup Quinoa Flakes
1 Egg
50g Kalamata Olives, finely chopped
2 Tablespoons Capers, finely chopped
Handful of Chopped Parsley
1 Garlic Clove, crushed or finely chopped

Tomato Sauce
1 Tablespoon Olive Oil
3 Cloves of Garlic, crushed or finely chopped
1 Jar Passata (no added sugar)
1 400g Tin of Chopped Tomatoes (no added sugar)
1 Teaspoon Rice Malt Syrup
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Heat a casserole dish on medium high heat, add olive oil and sauté the garlic for 1 minute. Add passata, tin tomatoes, rice malt and season with salt and pepper. Bring to the boil, then reduce the heat to a simmer.
    2. In a mixing bowl add chicken mince, quinoa flakes, egg, olives, capers, parsley, garlic and season with salt and pepper. Mix well and roll into balls.
    3. Add the chicken balls to the sauce making sure they are fully covered and simmer with the lid on for 10 minutes until the chicken meatballs are cooked through.

    Serve with Gluten Free Pasta, Cooked Quinoa or Sweet Potato Mash.
