Prawn Tacos

Prawn Tacos Healthy Mumma

Serves 4 (makes 8 tacos)

Ingredients

48 Prawns, peeled and deveined 
Olive Oil
Paprika (your choice smoked, hot, mild etc)
Dried Oregano
Himalayan Pink Salt and Freshly Cracked Black Pepper

Cos Lettuce
2 Avocados, cut into bite size pieces
1/4 Red Cabbage, cut thinly

Salsa
2 Corn, steamed and kernels cut off
1 Red Onion, diced
1 Can Black Beans, rinsed and drained
1-2 Tomatoes, diced
1 Red Capsicum, diced
1 Lime, squeezed
Season with Himalayan Pink Salt & Freshly Cracked Black Pepper

Sauce
4 Tablespoons Natural Greek Yoghurt
1 Lime, juice
Season with Himalayan Pink Salt & Freshly Cracked Black Pepper

    Method

    1. Marinate the prawns in oil, paprika, oregano and salt and pepper. Heat a large pan, add olive oil and cook prawns until cooked through. 
    2. While the prawns are cooking, put all sauce and salsa ingredients together in separate bowls and mix well.
    3. On separate plates place cos lettuce leaves, top with red cabbage, salsa, avocado, cooked prawns and drizzle over the sauce. Serve and enjoy!
