Pork Medallions with Caramelised Apples and Onions

Healthy Mumma Pork Medallions with Caramelised Apples and Onions

Serves 4


8-10 Pork Medallions (more if they are small pieces)
2 Tablespoons Coconut Oil
1 Large Onion, sliced
4 Apples, cored and sliced
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Heat a large pan over a medium high heat. Season the pork with salt and pepper.
    2. Add coconut oil to the pan, once melted, cook pork for about 2-3 minutes on each side until cooked through and browned.
    3. Set aside the pork and reduce the heat to medium low. Add the second tablespoon of coconut oil, once melted add the apples and onions.
    4. Cook apples and onions for approximately 5 minutes or until onions are caramelised and apples are soft.
    5. Serve the pork and top with the apples and onions.
