Prawn Taco

Healthy Mumma Prawn Tacos

Serves 4 Tacos

Ingredients

130g Raw Prawns
Seasoning of your choice – I used Healthy Mumma Taco Seasoning
Chilli Flakes (optional)
4 Tortillas
1/4 Red Cabbage, finely shredded
1 Red Capsicum, chopped into small pieces
1 Yellow Capsicum, chopped into small pieces
1 Tomatoes, diced
Himalayan Pink Salt and Freshly Cracked Black Pepper

Dressing
Handful Baby Spinach
3-4 Tablespoons Natural Greek Yoghurt
1 Lime, juice
Garlic Powder
Himalayan Pink Salt and Freshly Cracked Black Pepper

    Method

    1. Season Prawns with seasoning and salt and pepper. 
    2. In a frying pan, add olive oil and cook prawns until they turn pink and cooked through.
    3. In another pan, I like to use a grill pan for lines, heat tortillas on each side.
    4. Prepare the dressing by putting all ingredients into a blender.
    5. To prepare tacos, add prawns, diced tomato, capsicum and sauce.
