Quick & Easy Salmon Salad

Healthy Mumma Quick and Easy Salmon Salad

Serves 2


1-2 Pieces Skinless Salmon (depending on size)
1 Tablespoon Coconut Oil
Handful Fresh Spinach Leaves
1/2 Cucumber, cut into bite size pieces
1 Tomato, cut into bite size pieces
1/4 Red Onion, thinly sliced
1/2 Avocado, sliced into pieces
100g Goats Feta, crumbled

1 Lemon or Lime, juice
Avocado Oil
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Season salmon pieces with salt and pepper.
    2. Heat a frying pan on medium high heat, add coconut oil, once melted cook salmon for approximately 2-3 minutes on each side until just cooked through, the inside should still retain a dark pink colour. The salmon should also be easily flaked into pieces once cooled. Set aside to cool.
    3. Divide spinach leaves, cucumber, tomato, red onion and avocado amongst two bowls.
    4. Flake the salmon pieces and divide amongst the two bowls.
    5. Crumble the goats feta directly on top of the two bowls evenly.
    6. Squeeze lemon or lime juice directly on top of the salads, drizzle with avocado oil and season with salt and pepper. Enjoy!
