Cajun Chicken Pasta

Healthy Mumma Cajun Chicken Pasta

Serves 4-6


8 Chicken Breasts, skin off
2-3 Red Capsicums, cut into large pieces
2-3 Yellow Capsicums, cut into large pieces
3 Red Onions, cut into wedges
4 Garlic Cloves
3 Tomatoes, quartered
Olive Oil
Cajun Seasoning
1 Packet Cream Cheese
1 Packet Penne Pasta (Gluten Free)
Handful Spinach
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Preheat oven to 200C.
    2. Place red onions, garlic, capsciums and tomatoes in a dish, drizzle with olive oil and season with cajun seasoning, salt and pepper. Place in oven and cook for approximately 30 minutes.
    3. Place the chicken in a bowl, season with cajun seasoning and olive oil. 
    4. Meanwhile put a large pot of water seasoned with salt to cook the penne pasta as per packet instructions.
    5. Once the vegetables are cooked, in a large blender add the cream cheese, the contents of the baking tray and 2-3 ladles of pasta water, blend to create the sauce.
    6. In a large frying pan on medium high heat, add olive oil, cook chicken until just cooked through, add the sauce and heat through. Add the spinach to wilt and turn off the heat.
    7. Drain the pasta and add to the frying pan with the sauce, mix through, serve immediately.
