Spanish Chicken

Healthy Mumma Spanish Chicken

Serves 4-6


8-10 Skinless Chicken Chops (thighs on the bone) or Thighs 
Olive Oil
1 Red Onion, chopped
1 Red Capsicum, chopped
2 Garlic Cloves, chopped
1 Tablespoon Paprika
400g Can Diced Tomatoes
1 Cup Chicken Stock
8-10 Pieces of Smoked Bacon, chopped
3 Dried Bay Leaves
Large Handful of Chopped Parsley
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Pre heat oven to 180C.
      2. In a large oven proof casserole pot put on a medium high heat on the stove top. Heat olive oil, add onion, garlic, bacon and capsicum, cook and stir until onion is soft.
      3. Take off the heat and add all other ingredients, season with salt and pepper, making sure the chicken is covered by the liquid. 
      4. Place in the oven with the lid on and cook for 1.5-2 hours until the chicken is tender and falling off the bone.

      TIP:Serve with steamed rice, mashed sweet potatoes or gluten free pasta.
