Warm Chicken & Lentil Salad

Serves 4

Ingredients

2-4 Large Chicken Breasts, cut in half lengthways
1 Punnet of Mixed Cherry Tomatoes
1 Red Onion, finely sliced
1 Large Carrot, grated into strips
2 Celery Sticks, finely chopped
Large Handful of Rocket Leaves
Fresh Basil Leaves
400g Can Lentils (check ingredients to make sure no nasties), drained and rinsed
1 Lemon, juice
Himalayan Pink Salt
Freshly Cracked Black Pepper
Olive Oil

    Method

    1. Preheat oven to 200C. Place tomatoes and onion in a baking tray, season with salt and pepper and drizzle with olive oil. Cook until tomatoes have blistered, approximately 20 minutes.
    2. Heat barbeque grill or chargrill on a stove top to medium. Season chicken, drizzle with olive oil and cook until cooked through. Tip: if you have my eBook season with Healthy Mumma spice mixes for extra flavour.
    3. In the meantime, prepare separate bowls and evenly divide the rocket, carrot, celery, lentils and basil leaves.
    4. Once tomatoes and onions and chicken are cooked, divide evenly amongst the bowls. Dress each bowl with lemon juice and a drizzle of olive oil.
