Pork and Fennel Sausages (Gluten Free) Tray Bake with Apple and Veggies

Serves 4


8 Gluten Free Pork and Fennel Sausages
1/4 Red Cabbage, cut into thick slices
1/2 Butternut Pumpkin, cut into 1cm slices
2 Red Apples, cut into slices
8 Garlic Cloves, unpeeled
2 Red Onions, cut into quarters
2 Teaspoons Fennel Seeds
2 Teaspoons Dried Thyme or Two Fresh Thyme Sprigs
1/2 Cup Apple Cider Vinegar
Himalayan Pink Salt and Freshly Cracked Black Pepper
1 Bunch Broccolini
Extra Virgin Olive Oil


    1. Preheat oven to 200C.
    2. In a large baking tray place cabbage, pumpkin, apple, red onion and sprinkle with fennel seeds, thyme and apple cider vinegar. Drizzle with olive oil and season with salt and pepper.
    3. Place sausages on top and put in the oven to cook for 20 minutes. After 20 minutes place the broccolini on top and return to the oven for another 10 minutes. The tray bake is ready when the veggies are cooked through and the sausages have browned.
    4. Serve and enjoy!
