BBQ Ribs Healthy Mumma

Serves 4-6


1 Large Brown Onion, peeled and chpped into quarters
1/4 Cup Rice Malt Syrup or Natural Sweetener of your choice
1/4 Cup Apple Cider Vinegar
2 Garlic Cloves, peeled
3 Teaspoons Vegemite
500ml Filtered Water

3-5 Pork Spare Rib Racks


    1. Preheat oven to 180C.
    2. Process onion, rice malt syrup, apple cider vinegar, garlic and vegemite in a small food processor.
    3. Transfer the mixture to a large roasting pan and stir in the water. Add the ribs and turn to coat. Set aside for 30 minutes to marinade.
    4. Cover the pan with foil and roast for 1 hour. Turn ribs and roast uncovered for a further 1 hour or until tender. Be careful not to burn the marinade mixture and if necessary, add more water along the way.
    5. Serve with any additional marinade from the roasting pan.
