Balsamic Chicken Bake

Chicken and Chorizo Paella

Serves 4-6


8 Chicken Breasts, skin on
Chat Potatoes, cut in half
2 Red Onions, cut into wedges
6 Garlic Cloves
1 Packet Cherry Tomatoes
2 Bunches of Asparagus, trimmed
1 Tablespoon Dried Thyme
Olive Oil
Balsamic Vinegar
Himalayan Pink Salt and Freshly Cracked Black Pepper


    1. Preheat oven to 200C.
    2. Place chat potatoes in a dish, you may want to spread over two dishes, drizzle with olive oil and season with salt and pepper. Place in oven and cook for approximately 15 minutes.
    3. Meanwhile heat a frying pan over medium high heat with a drizzle of olive oil. Skin side down brown the chicken skin. Take out of the pan.
    4. Take the potatoes out of the oven and add the chicken, red onions, garlic cloves, tomatoes, asparagus, thyme and add a drizzle of olive oil and balsamic vinegar and  season with salt and pepper.
    5. Bake for approximately 30 minutes or until the chicken is cooked through and serve.
